Arrive at Mercado del Puerto before 12:30pm — the lunch rush hits fast and by 1pm every parrilla inside has a queue. Sit at the grill counter (barra) for the full smoke-and-fire theatre rather than a side table, and order the mixed grill for two even if dining solo; the portions are that generous.
